Final Verdict of overall bread experiment: B-. A lot of work for bread and to have to continually do this process every 3-5 days. However, if you knew you were having a dinner where you wanted some fresh baked bread and you could plan ahead, I could see why you might want to do this. It was fun to do this from beginning to end and see how this all comes together though.

Bravo for getting your hands into the dough! For a long time, bread dough and I just didn't get along. Nothing ever worked for me, and it got frustrating. Then my mother-in-law gave me one of her bread machines, and I suddenly decided I liked bread making. ;o)
I started picking up on some of the tricks to making good bread, including making sure the yeast is fresh, and that the dough was in a warm place so it would rise properly. Now that some of the mysteries have been solved for me, making bread by hand doesn't scare me so much, lol!
Your cinnamon rolls looked nice! :o) And I bet the bread tasted good, even if it wasn't as fluffy as you wanted.
